Grilled Fresh Tuna Salad

Ingredients

  • 2 Tbsp. sherry vinegar
  • 1/4 tsp. coarse salt
  • 1 Tbsp. Dijon mustard
  • 1/8 tsp. pepper
  • 1 tsp. chopped fresh or 1/4 tsp. dried oregano
  • 1 tsp. chopped fresh or 1/4 tsp. dried thyme
  • 1/4 cup extra-virgin olive oil
  • 4 (4 to 6 oz.) tuna steaks
  • 2 (8 oz.) bags Mediterranean salad blend

Directions

  1. Heat grill to medium-high. In a small bowl, whisk together vinegar and salt. Whisk in mustard, pepper, oregano and thyme. Slowly drizzle in oil whisking until thickened. Reserve 1/4 cup for salad.

  2. Pour remaining dressing into a large glass dish; add tuna and marinate for 15 minutes at room temperature, turning occasionally. Remove tuna; discard marinade.

  3. Grill tuna 2 minutes per side. Remove to a plate and keep warm.

  4. In a large bowl, dress salad with reserved dressing. Serve salad topped with grilled tuna.
