Ingredients
- 2 cups milk
- 2 Tbsp. cornstarch
- 6 Tbsp. sugar
- 2 eggs, separated
- 1/4 tsp. salt
- `1 tsp. vanilla
- 1 1/2 cups unsweetened apple sauce
Directions

Scald 1 1/2 cups milk in double boiler.

Add cornstarch to 4 Tbsp. sugar and mix.

Separate eggs, saving whites for meringue. Add yolks to cornstarch mixture with a little cold milk, and stir smooth, adding remainder of cold milk gradually.

Add cornstarch mixture to hot milk and cook, stirring constantly, 10 minutes, or until thick. Remove from heat; add salt and vanilla. Chill.

Fold chilled applesauce into chilled pudding before serving. Top with spoonfuls of sugar gradually. Sprinkle with cinnamon or nutmeg.
