Ingredients
- Cheddar-cheese Pastry:
- 2 1/4 cups flour
- 1 tsp. salt
- 3/4 cup shortening
- 1/2 finely shredded Cheddar cheese
- 5 Tbsp. water
- 5 cups peeled, cored and sliced tart apples
- 1/2 cup granulated sugar
- 1/4 cup packed light brown sugar
- 2 Tbsp. flour
- 1/2 tsp. grated lemon rind
- 2 Tbsp. lemon juice
- 1/4 tsp. salt
- 1/8 tsp. nutmeg
- 1 Tbsp. butter or margarine
- 1 egg beaten with 1 Tbsp. water
Directions

Prepare pastry. (see below)

Combine apples, sugars, flour, lemon rind and juice, salt and nutmeg. Turn into pastry-lined 9-inch pie pan. Dot with butter, adjust top crust, seal and bake on lowest rack in preheated 400 oven about 1 hour, or until golden brown.

Note: after 30 minutes put foil collar around edge of crust to prevent excessive browning. Cool on wire rack.

Cheddar-cheese Pastry:

Stir together flour and salt. Cut in shortening with 2 knives or pastry blender. Add cheese and mix lightly with fork.

Sprinkle with water, a tablespoon at a time, and mix lightly with fork until just moistened. Form into large ball with hands and chill at least 1/2 hour. Roll out 2 circles to line and cover 9-inch pie pan.
