Apple Pie with Cheddar- Cheese Pastry

Ingredients

  • Cheddar-cheese Pastry:
  • 2 1/4 cups flour
  • 1 tsp. salt
  • 3/4 cup shortening
  • 1/2 finely shredded Cheddar cheese
  • 5 Tbsp. water
  • 5 cups peeled, cored and sliced tart apples
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 2 Tbsp. flour
  • 1/2 tsp. grated lemon rind
  • 2 Tbsp. lemon juice
  • 1/4 tsp. salt
  • 1/8 tsp. nutmeg
  • 1 Tbsp. butter or margarine
  • 1 egg beaten with 1 Tbsp. water

Directions

  1. Prepare pastry. (see below)

  2. Combine apples, sugars, flour, lemon rind and juice, salt and nutmeg. Turn into pastry-lined 9-inch pie pan. Dot with butter, adjust top crust, seal and bake on lowest rack in preheated 400 oven about 1 hour, or until golden brown.

  3. Note: after 30 minutes put foil collar around edge of crust to prevent excessive browning. Cool on wire rack.

  4. Cheddar-cheese Pastry:

  5. Stir together flour and salt. Cut in shortening with 2 knives or pastry blender. Add cheese and mix lightly with fork.

  6. Sprinkle with water, a tablespoon at a time, and mix lightly with fork until just moistened. Form into large ball with hands and chill at least 1/2 hour. Roll out 2 circles to line and cover 9-inch pie pan.
