Applesauce Bread Pudding

Ingredients

  • 1 (16 oz.) loaf lite-style white bread
  • 1 cup raisins
  • 2 tsp. ground cinnamon
  • 2 cups skim milk
  • 1 cup Apple sauce8 egg whites
  • 1/2 cup brown sugar
  • 1 1/2 tsp. vanilla extract

Directions

  1. Cut sliced bread into 1/2-inch cubes; toss with raisins and cinnamon in a large bowl.

  2. Beat together milk, applesauce, egg whites, sugar and vanilla. Pour mixture over bread cubes; let stand 25 minutes.

  3. Heat oven to 350 degrees.

  4. Spray an 8 × 8 × 2-inch baking pan with non-stick cooking spray.

  5. Pour bread mixture into prepared pan and bake 35 to 40 minutes or until knife inserted in center comes out clean.

  6. Remove from oven and let strand 15 to 20 minutes before serving.
