Applesauce-Buttermilk Cake

Ingredients

  • 2 cups flour
  • 1 Tbsp. cinnamon
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1/2 cup margarine
  • 1 cup sugar
  • 2 eggs
  • 1 cup applesauce
  • 1 cup buttermilk
  • 1 cup chopped nuts (optional)

Directions

  1. In medium bowl stir together flour, cinnamon, soda, nutmeg and salt; set aside.

  2. In large bowl cream margarine and sugar until light; beat in eggs until well blended. Stir in applesauce and buttermilk. Gradually stir in flour mixture until blended; stir In nuts. Pour into greased 9-inch square baking pan.

  3. Bake in preheated 350 degree oven 40 to 45 minutes or until pick inserted in center comes out clean.

  4. Cool in pan on rack. Serve from pan.

  5. For microwave oven pour batter into 9-inch round deep cake dish or tube pan. Place in oven on saucer. Cook on medium 8 minutes, rotating dish quarter turn every 2 minutes. (recipe came before carousel in microwaves).

  6. Cook on high 4 to 6 minutes or until cake springs back lightly when touched. Cool directly on counter.
