Applesauce Cake and Apple Pattycakes

Ingredients

  • 2 1/2 cups flour
  • 2 cups sugar
  • 1 1/2 tsp. soda
  • 1 1/2 tsp. salt
  • 1/4 tsp. baking powder
  • 3/4 tsp. cinnamon
  • 1/2 tsp. cloves
  • 1/2 tsp. allspice
  • 1 1/2 cups canned applesauce
  • 1/2 cup water
  • 1/2 cup shortening
  • 2 eggs
  • 1 cup raisins
  • 1/2 cup chopped walnuts
  • Butter Frosting:
  • 1/3 cup butter, softened
  • 3 cups confectioners' sugar
  • 1 1/2 tsp. vanilla
  • 2 Tbsp. milk
  • few drops red food color.

Directions

  1. Heat oven to 350 degrees. Line 12 medium muffin cups with paper baking cups, grease and flour 9 × 9 × 2 inch pan.

  2. Measure all ingredients except frosting into large mixer bowl. Blend 1/2 minute on low speed, scraping bowl constantly. Beat 3 minutes on high speed, scraping bowl occasionally.

  3. Fill muffin cups 2/3 full; pour remaining batter into pan. (or full additional muffin cups)

  4. Bake cupcakes 25 to 30 minutes. Bake cake layer 50 to 55 minutes. Cool.

  5. Frost cupcakes and cake layer. Decorate cupcakes with pretzel sticks and candy spearmint leaves of desired.

  6. Butter Frosting:

  7. Blend butter and confectioners’ sugar. Beat in vanilla and a few drops red food color until smooth.
