Flank Steak with Marinade

Ingredients

  • 1 med head garlic
  • salt
  • 2 t pepper
  • 4 T butter1/4 C chopped scallions
  • 1 C dry red wine
  • 1 1/2 # flank steak

Directions

  1. Cut garlic head in1/2; cover wiith olive oil, and bake in foil 45 minutes. Mash into puree

  2. Salt and pepper steak.

  3. In heavy large skillet (no oil or fat added) and heat skillet and cook steak til seared (1 min each side).

  4. Reduce heat to medium and add 2 T (NOT 4) of butter and cook stead another 3-5 minutes on each side.

  5. Place steak in a separate plate or pan: Cover with foil and place in keep warm oven.

  6. save fat from skillet and reserve: add scallions and red wine into skillet that fat was drained from. Bring to a boil and whisk in garlic puree, Reduce by 1/2 AND then add

  7. back steak juices. Boil again and add 2 T butter when skillet off heat
