Ingredients
- 1 med head garlic
- salt
- 2 t pepper
- 4 T butter1/4 C chopped scallions
- 1 C dry red wine
- 1 1/2 # flank steak
Directions

Cut garlic head in1/2; cover wiith olive oil, and bake in foil 45 minutes. Mash into puree

Salt and pepper steak.

In heavy large skillet (no oil or fat added) and heat skillet and cook steak til seared (1 min each side).

Reduce heat to medium and add 2 T (NOT 4) of butter and cook stead another 3-5 minutes on each side.

Place steak in a separate plate or pan: Cover with foil and place in keep warm oven.
