Ingredients
- 2 large eggs
- 1 cup canned applesauce
- 1 cup granulated sugar
- 1/3 cup vegetable oil
- 3 Tbsp. milk
- 1 tsp. cinnamon, divided
- 1/4 tsp nutmeg
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 2 cups all-purpose flour
- 1 1/4 cups finely chopped pecans, divided
- 1/2 cup mixed candied fruit
- 1/4 cup packed light brown sugar
- Confectioners' sugar (optional)
- Candied green pineapple and red cherries

Beat eggs until foamy. Stir in next 4 ingredients. Mix 1/2 tsp. cinnamon and next 5 ingredients. Gradually add to first mixture, beating with spoon until well mixed. Stir in 1 cup nuts and the fruit. Spread in well-greased 9 × 5 × 3 inch loaf pan.

Mix remaining nuts and cinnamon and the brown sugar. Sprinkle evenly on top of batter and press lightly with hand.

Bake in preheated 350 degree oven 1 hour, or until done. To keep top from getting too brown, spread piece of foil over top during last 1/2 hour of baking.

Turn out on rack, turn right side up and cool. Wrap in foil and store in refrigerator. Will keep about a week. Can also be frozen. Sprinkle with confectioners’ sugar, if desired. Decorate with pineapple and cherries
