Ingredients
- 2 C instant mashed potatoes- cooked according to instructions
- 1 t salt
- 2 eggs-room temp
- 2 C all purpose flour( white lily brand is very light)-will add 1-2 C as you work the dough
- Chicken stock to cook gnocchi in
Directions

Knead dough until it’s soft and smooth(like bread dough)

Roll dough and cut into strips

Boil chicken broth (or water) with a little oil and salt

Dice chicken strips into small dough pieces and roll over into gnocchi shapes

Cook 4-5 min(I cooked about 8-9 min)
