Rice Salad with Tomatoes and Beans

Ingredients

  • 2 cups cooked white rice, at room temperature
  • 1 (15 1/2 oz.) can white beans, drained and rinsed
  • 4 Roma tomatoes, chopped
  • 3 Tbsp. extra-virgin olive oil
  • 3 Tbsp. lemon juice
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 cup cubed provolone or crumbled feta cheese
  • 1/2 cup finely chopped parsley

Directions

  1. In a large bowl combine rice, beans and tomatoes.

  2. In another bowl, whisk oil, lemon juice, salt and pepper. Pour over salad. Add cheese and parsley. Mix gently with a large spoon.
