Rice Salad with Tomatoes and Beans

Ingredients
- 2 cups cooked white rice, at room temperature
- 1 (15 1/2 oz.) can white beans, drained and rinsed
- 4 Roma tomatoes, chopped
- 3 Tbsp. extra-virgin olive oil
- 3 Tbsp. lemon juice
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/4 cup cubed provolone or crumbled feta cheese
- 1/2 cup finely chopped parsley
Directions

In a large bowl combine rice, beans and tomatoes.

In another bowl, whisk oil, lemon juice, salt and pepper. Pour over salad. Add cheese and parsley. Mix gently with a large spoon.
