Ingredients
- 1 lb. high-quality olives (3 cups)
- 1 lemon
- 1 Tbsp. ground coriander
- 1 Tbsp. ground cumin
- 1 1/4 cup extra-virgin olive oil
- 3 cloves minced garlic
- 1 tsp. crushed red pepper
Directions

In a bowl, zest lemon and squeeze lemon juice on olives.

Heat 1/4 cup of olive oil on medium-low heat, add coriander, cumin and garlic. Cook until lightly brown.

Add heated mix, remaining olive oil and spices to olives and gently stir.

For best results, refrigerate, letting olives marinate for 5 to 7 days, stirring once daily.
