Mushroom and Barley Soup

Ingredients
- 1 Lb. sliced fresh mushrooms
- 3/4 cups barley
- 6 cups vegetable broth
- 1/2 cup celery, finely chopped
- 1 tsp. chopped fresh thyme
- 1/8 tsp. salt
- 1/8 tsp. pepper
- 3/4 cup diced carrots
- 1 tsp. minced garlic
- 1 cup onion, finely chopped
- 1/4 cup extra-virgin olive oil
Directions

Heat oil in large pot over medium heat.

Stir in garlic, onion, carrots and celery until tender.

Stir in mushrooms and thyme, cook for additional 4 minutes.

Add vegetable broth and barley, bring to a boil then reduce heat to low.

Cover and simmer until barley is tender, roughly 50 minutes.

Salt and pepper to taste, garnish with fresh thyme.
