Mushroom and Barley Soup

Serves 6 people

Ingredients

  • 1 Lb. sliced fresh mushrooms
  • 3/4 cups barley
  • 6 cups vegetable broth
  • 1/2 cup celery, finely chopped
  • 1 tsp. chopped fresh thyme
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 3/4 cup diced carrots
  • 1 tsp. minced garlic
  • 1 cup onion, finely chopped
  • 1/4 cup extra-virgin olive oil

Directions

  1. Heat oil in large pot over medium heat.

  2. Stir in garlic, onion, carrots and celery until tender.

  3. Stir in mushrooms and thyme, cook for additional 4 minutes.

  4. Add vegetable broth and barley, bring to a boil then reduce heat to low.

  5. Cover and simmer until barley is tender, roughly 50 minutes.

  6. Salt and pepper to taste, garnish with fresh thyme.
