Salmon Stuffed Mushrooms

Ingredients

  • 12- 16 fresh mushrooms
  • 1/2 cup Havarti cheese, shredded
  • 1/2 lb. salmon fillet, finely chopped
  • 1/4 cup red/green bell pepper, finely chopped
  • 1/4 cup green onion, finely chopped
  • 1 Tbsp. minced garlic
  • 1/4 cup extra-virgin olive oil

Directions

  1. Heat oven to 350 degrees. Line baking sheet with parchment paper.

  2. In a large saucepan, add oil and garlic, cook until

  3. tender.

  4. Add salmon to skillet and cook, until salmon flakes, turning only once.

  5. Clean and remove stems from mushrooms, then drizzle with garlic and oil from pan.

  6. Chop salmon and mix in bell pepper and cheese.

  7. Stiff mushrooms with salmon mixture, then bake for 15 minutes or until caps are tender and cheese has melted.

  8. Garnish with onion/ chives
