Mushroom and Salmon Kabobs

Ingredients

  • 1Lb. salmon fillet, chunked
  • 12 fresh mushrooms
  • 1 bell pepper, sliced
  • 1 purple onion, sliced
  • 1 cup grape tomatoes, sliced
  • 1 zucchini, sliced
  • 1 Tbsp. minced garlic
  • 1/3 cup extra-virgin olive oil
  • 3 Tbsp. lime juice
  • Salt and pepper to taste

Directions

  1. Place salmon, mushrooms, onions, bell peppers and tomatoes in a sealable bag or bowl and add salt.

  2. In a saucepan, heat olive oil, lime juice and garlic until garlic is tender.

  3. Add garlic mixture to vegetables and fish, allow to marinate for 15 to 30 minutes.

  4. Heat broiler or grill, skewer kabobs with marinated mixture.

  5. Bring leftover marinade to a quick boil.

  6. Cook for approximately 10 minutes, drizzling occasionally with cooked marinade.
