Apple Snow Salad

Ingredients

  • 1 ( 8 1/4 oz.) can crushed pineapple
  • 1/2 cup sugar
  • 3 Tbsp. lemon juice
  • Dash of salt
  • 2 eggs, beaten
  • 2 cups finely chopped apple
  • 1/2 cup finely chopped celery
  • 1 cup whipping cream, whipped

Directions

  1. Drain pineapple, reserving syrup.

  2. Add enough water to pineapple syrup to make 1/2 cup. Combine pineapple syrup, sugar, lemon juice, salt, and eggs in a saucepan, mix well.

  3. Cook over low heat, stirring constantly, until smooth and thickened. Chill syrup thoroughly.

  4. Fold in pineapple, apple, celery and whipped cream. Spoon into an 8-inch square pan; freeze until firm. Cut into squares to serve.
