apricot Cheesecake

Ingredients

  • 1 can (17 oz.) California Apricot halves, drained (reserve 1/2 cup syrup)
  • 2 1/3 cups Bran Flakes cereal, crushed
  • 2 Tbsp. brown sugar
  • 1/4 cup melted butter or margarine
  • 1/2 cup water
  • 1 envelope Know Unflavored Gelatin
  • 1/3 cup sugar
  • 2 pkg. ( 8oz. each) cream cheese , softened
  • 1/2 tsp. almond extract

Directions

  1. Preheat oven to 375 degrees.

  2. Reserve 3 apricot halves for garnish; chop remaining .

  3. Combine crushed bran flakes cereal, brown sugar and butter; reserve 3 Tbsp. mixture. Press remaining onto bottom of 8 or 9-inch square baking pan. Bake 5 minutes; cool.

  4. Mix reserved syrup with water; bring to a boil.

  5. Meanwhile, in large bowl, mix unflavored gelatin with sugar; add hot liquid and stir until gelatin is completely dissolved. With electric mixer, beat in cream cheese and almond extract until smooth, about 5 minutes. Fold in chopped fruit.

  6. Pour into prepared crust; sprinkle with reserved bran flake mixture. Chill until firm. Garnish with reserved apricot halves, sliced.

  7. Variation: Substitute 2 Tbsp. almond liqueur for almond extract.
