Apricot-Ginger Chicken

Ingredients

  • 1/2 cup apricot preserves
  • 1/4 cup cider vinegar
  • 2 Tbsp. oil
  • 1 1/2 tsp. ground ginger
  • 1 broiler-fryer (about 3 lbs.), halved
  • salt and pepper to taste

Directions

  1. Basting Sauce:

  2. In a small bowl mix preserves, vinegar, and ginger, mix well; set aside.

  3. Season chicken with salt and pepper.

  4. For grill:

  5. Place chicken over charcoal, skin side up, 5 to 7 inches from medium-hot coals.

  6. Grill 30 to 40 minutes, turning every 10 minutes. Grill 20 minutes longer or until fork-tender and well browned, basting and turning every 5 minutes.

  7. For Broiler:

  8. Place chicken, skin side down, on lightly greased broiler pan rack. Broil 6 inches from heat source 25 minutes, basting frequently after 15 to 20 minutes. Turn; broil 20 minutes or until fork-tender, basting frequently after 10 to 15 minutes.
