Apricot Filling

Ingredients

  • 2/3 up snipped dried apricots
  • 1/4 cup water
  • 1/2 tsp. finely shredded orange peel
  • 1/4 cup orange juice
  • 1/8 tsp. ground cinnamon
  • 3 Tbsp. sugar
  • 1 Tbsp. orange liqueur, brandy or orange juice

Directions

  1. In a small saucepan combine dried apricots, water, orange peel, orange juice and cinnamon. Bring to a boil. Reduce heat and simmer, covered, for 10 minutes, or until apricots are tender.

  2. Stir ion sugar and orange liqueur. Cover and simmer 10 minutes more. Mash with potato masher until nearly smooth. Cover and chill at least 2 hours.

  3. makes about 2/3 cup

  4. use as topping for ice cream, filling for cupcakes, fried pies, or doughnuts.
