Apricot- Pineapple Salad

Ingredients

  • 12 oz. dried apricots
  • 1 1/2 cups water
  • 1 (6 oz.) pkg. orange gelatin
  • 1 cup hot fruit juice
  • 1 (8 oz.) can crushed pineapple, drained (reserve juice)
  • 2 Tbsp. lemon juice
  • 1 cup finely slivered almonds
  • lettuce leaves and mayonnaise

Directions

  1. Cook apricots in 1 1/2 cups water until very soft. Puree in food processor or blender.

  2. Dissolve orange gelatin in cup of very hot fruit juice (the juice reserved from the pineapple plus enough orange juice to make a cup).

  3. Add apricot pulp, pineapple, lemon juice, and almonds; stir until well-mixed. Pour into a 2-quart flat dish and chill until set.

  4. To serve, cut into squares and serve on a lettuce leaf with a dollop of mayonnaise on top.
