Campout Casserole

Ingredients

  • 1 lb. lean ground beef
  • 1 small onion, chopped
  • 1 small green bell pepper, chopped
  • 2 (15 oz.) cans Great Northern beans
  • 1 cup mild salsa
  • 4 slices cooked bacon, crumbled, divided use
  • 1 cup shredded cheddar cheese, divided use

Directions

  1. Heat oven to 375 degrees.

  2. In a large skillet, cook beef, onion and bell pepper for 10 minutes or until beef is no longer pink and vegetables are softened; drain well. Stir in beans and salsa. Bring to a boil, reduce heat, cover and simmer 10 minutes or until slightly thickened.

  3. Spoon half the mixture into a 2-quart baking dish coated with cooking spray. Sprinkle with half the bacon and half the cheese. Pour remaining bean mixture over cheese. Top with remaining bacon and cheese.

  4. Bake, uncovered, 30 minutes or until bubby.
