Joy’s Chicken and Dumplin’s

Ingredients

  • 2 to 3 carrots
  • 1 small onion
  • 2 to 3 ribs celery
  • 1 whole chicken
  • Water
  • Salt and pepper
  • 2 large cans refrigerated biscuits

Directions

  1. Place carrots, onion and celery in the bottom of a Crockpot, lay whole chicken over vegetables and add enough water to cover. Season with salt and pepper, if desired. Cook on low for 5 hours or until chicken is falling off the bone.

  2. Remove chicken and debone. Strain broth into a large pot. Take the biscuits and flatten each into a small circle. Cut into strips and drop into boiling broth. Reduce heat and simmer for about 15 minutes. Add chicken pieces aand serve.
