Ingredients
- 3/4 cups butter, softened
- 1/2 cup sugar
- 1/4 tsp. almond extract
- 1 3/4 cups flour
- 1/2 cup pecans, finely chopped
- 1/4 tsp. salt
- 1 (8 oz.) jar seeded raspberry preserves
- 1/2 cup shredded or flaked coconut
Directions

Heat oven to 350 degrees.

In a medium bowl, beat butter, sugar and almond extract until thoroughly combined. Add flour, pecans and salt. Beat until mixture resembles coarse crumbs. Reserve 1 cup of the mixture.

Press the remaining mixture into the bottom of a 9 × 13-inch pan. (Use a slightly smaller pan for thicker bars.)

Spread the raspberry preserves evenly over the crust. Sprinkle preserves with the reserved flour mixture and coconut.

Bake 25 to 30 minutes or until crust and top are golden. Cool in the pan on a wire rack. Cut into bars.
