Ardis’ Rice Salad

Ingredients

  • 2 cups cooked long-grain rice
  • 1/4 to 1/2 cup olive oil
  • 1/4 cup vinegar
  • 1 tsp. salt
  • 1 tsp. ground black pepper
  • 1 tsp. tarragon
  • 1/2 cup finely chopped green bell pepper
  • 1/2 cup chopped pimento
  • 1/2 cup chopped parsley
  • 1/2 cup chopped onion
  • 1 cup chopped ripe tomato
  • 1 cup chopped, seeded cucumber
  • Hard- cooked eggs and sliced olives for garnish, optional

Directions

  1. While rice is hot, mix with olive oil, vinegar, salt, black pepper and tarragon. Cool.

  2. Add green pepper, pimento, parsley, onion, tomato and cucumber. Mix well.

  3. Place in a large serving bowl and garnish with hard-cooked eggs and sliced olives, if desired. Serve immediately or cover and refrigerate until serving time.
