Ingredients
- For the marinated queso fresco:
- 4 oz. queso fresco, crumbled
- 2 Tbsp. extra-virgin olive oil
- 1/4 tsp. crushed garlic
- Zest of 1/2 lemon
- Salt and ground black pepper, to taste
- 2 grilled beef hot dogs
- 2 hot dog buns
- 4 oz. chorizo sausage, cooked and crumbled
- Chimichurri
- Pickled red onions
Directions

To make the marinated queso fresco: Combine the cheese, olive oil, garlic and lemon zest and mix well.

Season to taste with salt and pepper. Cover and refrigerate overnight.

To assemble: Place grilled hot dogs in buns, top with cooked chorizo, chimichurri, pickled red onions and marinated queso fresco.
