Mexican Cornbread

Ingredients
- 3 C cornmeal mix
- 1 T sugar
- 2 1/2 C milk
- 3 eggs
- 1 sm. onion, chopped
- 1/2 C oil
- 2 1/2 C cheddar cheese, grated
- 1 sm. jar pimentos
- 1/2 C finely chopped jalapeno peppers (about 3 to 4)
- 1 sm. can creamed corn
- 2 C sausage, cooked and drained
Directions

Preheat oven to 400 degrees F. Put about 1 T of shortening in a pan larger than 9×13 or in two smaller pans. Heat them in oven while you are mixing the batter. Mix all ingredients and pour into the hot pan(s). Bake for about 40 minutes. Let cool a little before cutting.
