Artichokes in Bouillon

Ingredients

  • 1 rib celery
  • 1 carrot
  • 2 sprigs parsley
  • 1 slice lemon
  • 8 peppercorns
  • 1/4 tsp. tarragon leaves
  • 1/4 tsp. thyme leaves
  • 1 tsp. salt
  • 2 quarts water
  • 4 medium artichokes

Directions

  1. Combine celery, carrot, parsley, lemon, peppercorns, tarragon and thyme inn cheese cloth bag. Add with salt to water in saucepan just large enough to hold artichokes snugly. Bring to boil; boil 10 minutes. Remove cheesecloth bag.

  2. Cut off 1-inch of tops of artichokes and stems. Rinse artichokes and stand upright in boiling bouillon. Cover and boil gently 35 minutes or until base can be pierced easily with fork. Turn
