Artichoke Grapefruit Salad

Ingredients

  • 1 (15 oz.) can artichoke hearts
  • 1/4 cup salad oil
  • 2 Tbsp. vinegar
  • 1 tsp. Worcestershire sauce
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 Tbsp. chopped parsley
  • Lettuce, romaine, endive
  • 2 pink grapefruit, sectioned

Directions

  1. Drain artichoke hearts and cut in halves.

  2. Combine oil, vinegar, salt Worcestershire sauce, pepper and parsley, mixing well. Pour over artichokes in bowl and chill for several hours.

  3. Combine greens; add artichoke mixture and grapefruit; toss and serve.
