Ancho Grilled Strip Filets

Ingredients

  • 2 black Canyon Strip filets, cut 1 1/2 to 2 inches thick, 8 oz. each
  • Salt and pepper
  • Ancho chili rub:
  • 1 Tbsp. ground ancho chili powder
  • 3 cloves garlic, minced
  • 1 1/2 tsp. dried oregano leaves, crushed
  • 1 tsp. unsweetened cocoa powder
  • 1 tsp. freshly grated orange peel
  • 1/2 tsp. ground cinnamon

Directions

  1. Combine rub ingredients; press evenly onto filets.

  2. Place filets on grid over medium, ash-covered coals, grill filets, covered, 10 to 12 minutes for medium rare doneness, turning once; do not overcook. Season with salt and pepper, as desired.
