Roasted Chicken with pilaf

Ingredients

  • rotisserie chicken
  • 1/2 cup bagged matchstick cut carrots
  • 1/2 cup dried cherries or raisins
  • 1 (6.6 oz) pkg rice pilaf with almonds ( eg Near East)
  • 1/2 tsp grated lemon zest
  • 1/4 cup fresh parsley

Directions

  1. Bring 1 3/4 cups water to boil

  2. Stir in carrots, cheries, rice with seasoning package and zest

  3. Reduce heat, cover simmer x 20 min until liquid is absorbed

  4. stir in 3 tbsp parsley
