Ingredients
- rotisserie chicken
- 1/2 cup bagged matchstick cut carrots
- 1/2 cup dried cherries or raisins
- 1 (6.6 oz) pkg rice pilaf with almonds ( eg Near East)
- 1/2 tsp grated lemon zest
- 1/4 cup fresh parsley
Directions

Bring 1 3/4 cups water to boil

Stir in carrots, cheries, rice with seasoning package and zest

Reduce heat, cover simmer x 20 min until liquid is absorbed

stir in 3 tbsp parsley
