Arugula Salad with Parmesan Flakes

Serves 4 people

Ingredients

  • 1/2 lb. arugula
  • 1 clove garlic, peeled and halved
  • 1 Tbsp. red wine vinegar
  • 3 Tbsp. olive oil
  • Salt and freshly ground black pepper
  • 1 cup fresh Parmesan cheese, curt into flakes

Directions

  1. Wash and spin of blot dry arugula. Rub garlic halves around salad bowl and then discard them. Or, fir a stronger garlic flavor, crush garlic and place it in bowl. Out vinegar, oil and salt and pepper to taste in bowl. Mix lightly with a fork. Add arugula and toss gently in dressing. Scatter Parmesan over top and serve.
