Ingredients
- 6 medium potatoes, peeled , cooked and sliced
- 1 cup sliced celery
- 1 cup thinly sliced red onion
- 1/3 cup chopped parsley
- 1/4 cup low-calorie Italian dressing
- 3 Tbsp. wine vinegar
- 2 tsp. salt
- dash cayenne pepper
Directions

In large bowl, combine hot potatoes with remaining ingredients.

Refrigerate to chill.

Tip: Marinate hot potatoes in dressing while they chill to bring put full flavor- you’ll need less dressing.
