Garden Soup

Serves 8 people

Ingredients

  • 1 medium onion, chopped
  • 1 Tbsp. diet margarine
  • 3 medium potatoes, peeled and diced
  • 2 medium carrots, peeled and sliced
  • 1 medium stalk celery, sliced
  • 2 Tbsp. chopped parsley
  • 4 chicken bouillon cubes
  • salt and dash pepper

Directions

  1. In large, heavy, non-stick kettle or Dutch oven, cook onion in margarine.

  2. Add remaining ingredients and 5 cups water. cover and simmer 40 minutes or until vegetables are tender.

  3. Serve as is, or puree in an electric blender and reheat.
