Annette’s Marinated Fresh Mushrooms

Ingredients
- 1 lb. fresh mushrooms
- 1 cup white vinegar
- 2 cups water
- 1/2 cup sliced carrots
- 1/2 cup sliced celery
- 1/2 cup red bell pepper strips
- 1/2 cup green bell pepper strips
- 1/3 cup olive oil
- 1 tsp. fresh oregano leaves, crushed, OR 1/2 tsp. dried
- 3/4 tsp. salt
- 1/4 tsp. garlic powder
- 1/4 tsp ground black pepper

Rinse, pat dry and slice or halve mushrooms.

In a medium saucepan. combine mushrooms and

vinegar; bring to a boil. Reduce heat and simmer, covered, for 3 minutes.

Add red and green pepper to saucepan; cover and simmer until all vegetables are tender, about 3 minutes. Drain and set aside to cool.

In a medium bowl, mix olive oil, oregano, salt, garlic powder and black pepper. Let stand 10 minutes. Stir in mushrooms, carrots, celery and peppers. Mix well. Cover and refrigerate at least 2 hours before serving.
