Ingredients
- 2 jars ( 6 oz. each) marinated artichoke hearts
- 1 cup chopped onion
- 1 clove garlic, minced
- 1/2 cup thinly sliced celery
- 1 cup chicken broth
- 1 cup cooked rice
- 1/3 cup minced fresh parsley
- 1/2 tsp. salt
- 1/8 tsp. pepper
Directions

Drain artichokes, reserving 3 Tbsp. marinade.

In 2-quart microwave-proof dish, place the reserved marinade, onion, garlic, and celery. Cook on HI 2 1/2 minutes, or until onion is transparent. Stir in remaining ingredients, including artichokes. Cook, covered, on HI 3 minutes, stirring once during cooking. Let stand, uncovered, 5 minutes before serving.
