Ingredients
- 2 cups cubed potatoes
- 1/2 cup chopped onion
- 1/2 chopped green pepper
- 1 tbsp vegetable oil
- 2 cups egg substitute
- 2 tbsp minced fresh basil
- 1/2 tsp salt
- 1/8 tsp cayenne
Directions

Place potatoes in a microwave-safe bowl; add 1 inch of water. Cover and microwave on high for 7 minutes; drain.

In a large nonstick skillet coated with cooking spray, saute the onion, green pepper and potatoes in oil until tender. Add the egg substitute, basil, salt and pepper. Cook and stir over medium heat until the eggs are completely set.
