Butter Cookies

Ingredients
- 15 oz. butter (30 TBSP.) softened
- 1 c. granulated sugar
- 2 extra large egg yolks
- 1 tsp. vanilla
- zest of 2 lemons
- 3 3/4 c. flour
- (other additions: Lime, Orange, 2 tsp. pumpkin pie spice, 2 tsp. apple pie spice, use any nut flour instead of regular....etc, very versatile cookie!)

With an electric mixer on low speed, cream butter. As it starts to soften, increase speed to medium; continue beating until smooth, 1 to 2 minutes. Add the sugar and mix until blended, about 2 minutes. Reduce speed to low and mix until a soft dough forms.

In a small bowl, whisk the egg yolks and vanilla. Add this to the butter mixture. mixing on medium speed for about 1 min. Add the flour in 2 stages, mixing each time until just blended, 1 minute. Shape the dough into a ball. seal in plastic, and refrigerate overnight.

Heat oven to 350*. Line trays with Parchment.

On lightly floured surface, roll dough out to 1/8" thick. Bake cookies until golden and firm, about 15 min. Fill with lemon curd and add top cookie…..
