Ingredients
- 2 lbs beef tenderloin roast
- 2 tsp canola oil
- 3 tsp pepper
- 3 garlic cloves, minced
- 2 1/2 tsp brown sugar
- 1 tsp salt
- 1 tsp ground coriander
- 1/2 tsp ground chipotle pepper
- 1/4 tsp cayenne
Directions

Brush beef with oil. Combine the remaining ingredients; rub over meat. Cover and refrigerate for 2 hours.

Place on a rack coated with cooking spray in a shallow roasted pan. Bake, uncovered, at 400 for 45-55 minutes or until meat reaches 145. Let meat stand for 10 minutes before slicing.
