Cheeseburger Quinoa Skillet

Ingredients

  • 1 lb. 93% ground beef (or ground turkey)
  • 1 cup diced onion
  • 1 tsp. seasoning salt (like Lawry's)
  • 1 1/2 cup low-sodium spicy vegetable juice ( like V8)
  • 1 1/2 cup low-sodium chicken broth
  • 2 cups quinoa, uncooked
  • 1 (14 oz.) can diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1/4 cup dill hamburger pickles roughly chopped

Directions

  1. Place meat and onions in a large deep skillet. Add seasoning salt and cook over medium-high heat until meat is browned, 5 to 6 minutes. Remove meat mixture from pan and set aside.

  2. Add juice, broth and quinoa to skillet. Cover and cook 20 minutes, stirring occasionally.

  3. Return meat to pan and add diced tomatoes. Cover and cook until water is absorbed, 10 to 15 minutes. Top with cheese and pickles, cover and cook until the cheese is melted, 3 to 5 minutes.
