Swedish Shortbread

Ingredients

  • 1 cup butter, softened
  • 1/2 cup plus 2 T sugar
  • 2 -2 1/2 cups flour
  • 1/3 cup raspberry jam
  • 1 cup powdered sugar
  • 1 tsp almond extract
  • 2-3 tsp water

Directions

  1. at oven to 350.

  2. In large bowl, blend butter and sugar.

  3. Add flour and mix well.

  4. Divide dough into 6 parts.

  5. On ungreased cookie sheet, roll or pat each part into a strip about 1 1/2 inches wide and 12 inches long.

  6. Using knife handle, make slight indentation lengthwise down center of each strip. Fill with jam.

  7. Bake at 350 for 10-12 minutes until edges are lightly browned.

  8. In small bowl, mix powdered sugar, almond extract and water to make a think glaze.

  9. While still warm, drizzle glaze across stripsand cut diagonally into 1-inch slices.

  10. Dough can also be put into shortbread pan or tiny muffin tins.

  11. About 60 cookies.
