Ingredients
- 1/2 C butter
- 1 C water
- 1 C sifted all purpose flour
- 1/4 t salt
- 4 eggs
Directions

Makes 12 large cream puffs-round balls

Bring butter and water to vigorous boil

Lower heat and add:

1 C flour and salt mixture

Cook:

until stiff ball forms, stirring vigorously

Take off heat and add 4 eggs, one at a time, beating hard after each egg is added:

Use 31 tip and form eclairs into balls with 2 1/2 inch diameter and 2 inches apart.

Bake 450 for 5 minutes then:325 for 20 minutes on greased cookie sheet
