Cream Puffs

Ingredients

  • 1/2 C butter
  • 1 C water
  • 1 C sifted all purpose flour
  • 1/4 t salt
  • 4 eggs

Directions

  1. Makes 12 large cream puffs-round balls

  2. Bring butter and water to vigorous boil

  3. Lower heat and add:

  4. 1 C flour and salt mixture

  5. Cook:

  6. until stiff ball forms, stirring vigorously

  7. Take off heat and add 4 eggs, one at a time, beating hard after each egg is added:

  8. Use 31 tip and form eclairs into balls with 2 1/2 inch diameter and 2 inches apart.

  9. Bake 450 for 5 minutes then:325 for 20 minutes on greased cookie sheet
