Chocolate Weetbix Slice

The biscuit base recipe is a nice basic recipe which can be turned into different slices depending on the icing used.
A thin layer of peppermint icing, let set, then ice again with chocolate icing – Peppermint Slice.
Add orange juice to icing and make Jaffa Slice.
Use brown or white sugar in the base, omit cocoa if you want a plain base.

Serves 20 people

Ingredients

  • 3 Weetbix, crushed
  • 1 C self raising flour (or 1 C plain flour and 1 t baking powder)
  • 1 C dessicated coconut
  • 3/4 C sugar
  • 150 g butter, melted
  • 1 t vanilla essence
  • 1/4 C cocoa (optional)

Directions

  1. Mix dry ingredients together in bowl.

  2. Add melted butter and vanilla essence.

  3. Mix well.

  4. Press into paper-lined slice pan.

  5. Bake at 180oC approximately 15-20 minutes until firm.

  6. Allow to cool, then ice with basic icing (or see above for options).

  7. Sprinkle with coconut or chocolate sprinkles if desired.

  8. When icing has set, cut into squares.
