Ginger Crunch

Mum and I used to bake this every week when I was a young girl – yummy

Prep time: 10 minutes
Cook time: 20 minutes
Serves 20 people

Ingredients
- 125 g butter, melted
- 1/2 C sugar
- 1 1/2 C flour
- 1 t baking powder
- 1 1/2 t ground ginger
- Icing:
- 80 g butter
- 2 T golden syrup
- 2 t ground ginger
- 1 1/2 C icing sugar
Directions

Mix dry ingredients in bowl, add melted butter and mix well.

Press into paper-lined slice pan.

Bake at 180oC approx 20 minutes.

Immediately when taken from oven, top with icing.

For icing:

Gently melt all ingredients together over low heat.

Pour over cooked base, and let set.

Note: For thicker icing, add extra half icing ingredients.

Cut into squares.
