Ingredients
- Crust
- 1 1/2 C graham crackers(abt 10)
- 1/4 C sugar
- 6 T melted butter
- Filling:
- 3 egg yolks
- 1/4 C sugar
- 1 14 oz sweetened condensed milk
- 2 T grated lemon zest
- 1/2-3/4 C lime or lemon juice
- Topping
- whipped cream
- 1/4 c conf sugar
- 1/4 t vanilla

Crust

mix ingredients

line 9 inch pie pan, up sides, pressed

Reserve some crumbs for topping

Bake
-
350 deg for 10 minutes

Filling:

Beat egg yolks and sugar- high speed, with paddle attachment for 5 minutes, until thick

Lower mixer speed and add milk, lime zest, and juice

Pour into baked pie shell and freeze OR

Can add some of egg whites and fold into filling mixture

Topping
-
Beat heavy cream and then add conf sugar

Can freeze and cover with tin foil
