Frozen Key Lime PIe

Ingredients

  • Crust
  • 1 1/2 C graham crackers(abt 10)
  • 1/4 C sugar
  • 6 T melted butter
  • Filling:
  • 3 egg yolks
  • 1/4 C sugar
  • 1 14 oz sweetened condensed milk
  • 2 T grated lemon zest
  • 1/2-3/4 C lime or lemon juice
  • Topping
  • whipped cream
  • 1/4 c conf sugar
  • 1/4 t vanilla

Directions

  1. Crust

  2. mix ingredients

  3. line 9 inch pie pan, up sides, pressed

  4. Reserve some crumbs for topping

  5. Bake

  6. 350 deg for 10 minutes

  7. Filling:

  8. Beat egg yolks and sugar- high speed, with paddle attachment for 5 minutes, until thick

  9. Lower mixer speed and add milk, lime zest, and juice

  10. Pour into baked pie shell and freeze OR

  11. Can add some of egg whites and fold into filling mixture

  12. Topping

  13. Beat heavy cream and then add conf sugar

  14. Can freeze and cover with tin foil
