Lemon Bliss cake

Ingredients

  • Cake
  • 1 C unsalted butter
  • 2 C sugar
  • 1 t salt
  • 4 large eggs
  • 2 t baking powder
  • 3 C all purpose flour
  • 1 C milk
  • grated rind of 2 lemons or 3/4 t lemon oil
  • frosting-glaze
  • 1/3 C squeezed lemon juice
  • 3/4 C sugar
  • OR
  • 3 C conf sugar
  • 1/2 t vanilla extract
  • juice of 3 lemons
  • 1 stick unsalted butter

Directions

  1. Preheat oven to 350

  2. Lightly grease tube pan

  3. Beat together butter, sugar, and salt until fluffy

  4. Add baking powder, then add flour alternately with milk, starting and ending with flour

  5. Stir in grated lemon rind or oil

  6. Bake 55-60 minutes

  7. Glaze cake while warm after poking holes in warm cake
