Chicken/Pasta/Roasted Red Pepper

Ingredients

  • Chicken breasts-thinner and cut into strips
  • 1/2 C flour
  • 1/4 C olive oil
  • Add
  • 1/4 C scallions or onions
  • 2 chopped clove garlic buds
  • 1 large red pepper, without skin
  • 1 C roma tomatoes, sliced
  • 1/4 C chicken stock3/4 C heavy cream
  • 1/4 C parmesan cheese
  • Mushrooms-chopped
  • Chardonnay-opt

Directions

  1. Dredge chicken in flour and saute in oil

  2. Remove from heat

  3. Sauté onions and add garlic, tomatoes, and red peppers, salt and pepper

  4. Add chicken stock

  5. Add chicken strips

  6. Chardonnay is opt

  7. heavy cream and bring to boil

  8. Add parmesan, scallions and mushrooms

  9. Serve on pasta-sprinkle with dash parsley
