Chicken Piccata

Ingredients

  • 4 chicken cutlets
  • 1/2 t salt
  • 1/4 t pepper
  • 1/3 C flour
  • juice of 2 lemons
  • 2 T oil
  • 3 T unsalted butter
  • 1/2 C chicken broth
  • 2 T capers

Directions

  1. Flour, salt and pepper chicken cutlets

  2. Saute in oil and 1 T of butter (2-3 min a side)

  3. Lower heat and add, broth, lemon juice and capers

  4. Simmer until sauce thickens (3-4 min)

  5. Remove chicken, add 2 T butter

  6. Serve sauce over chicken
