Blackened Fish

Great on skillet and grill

Ingredients

  • 1 Tbsp paprika
  • 2 1/2 tsp salt
  • 1 tsp onion powder
  • 1 tsp cayenne
  • 3/4 tsp white pepper
  • 3/4 tsp black pepper
  • 1/2 tsp dried thyme leaves, crushed
  • 1/2 tsp dried oregano leaves
  • 2 1/4 lbs fillets (6 oz each)

Directions

  1. In shallow bowl, combine seasoning ingredients and set aside

  2. Place skillet on hot grill

  3. Skillet is ready when water dances across it

  4. Dredge both sides of fillet in seasoning mixture

  5. Cook for 2 minutes on each side or until fish is firm and opaque and just begins to flake
