Apple-Cranberry Cobbler

Ingredients

  • 1 1/2 cup fresh cranberries
  • 6 cup sliced tart apples
  • 1 Tbsp. grated orange peel
  • 2 Tbsp. orange juice
  • 1 1/4 cup sugar
  • 2 1/2 Tbsp. quick-cooking tapioca
  • 1/4 tsp. salt
  • 2 Tbsp. butter or margarine
  • 2 Tbsp. sugar

Directions

  1. Combine cranberries, apples, orange peel and orange juice. In a small bowl combine 1 1/4 cups sugar, tapioca and salt; pour over fruit; mix well; let stand 15 minutes.

  2. Pour into shallow casserole; dot with 2 Tbsp. butter or margarine; cover; bake at 425 degrees for 30 minutes.

  3. Meanwhile combine remaining ingredients; stir with fork until a soft dough forms. Drop heaping tablespoons on top of hot fruit mixture. Bake uncovered 15 minutes longer or until dumplings are golden brown and done.

  4. Serve warm with plain cream.
