Apple Grape and Orange Salad

Ingredients

  • 5 medium, tart, red-skinned apples
  • 2 Tbsp. orange juice
  • 1 1/2 cup halved, seeded red grapes
  • 1 stem celery, thinly sliced
  • 1/2 cup coarsely chopped toasted walnuts
  • Lettuce leaves
  • Orange slices, for garnish

Directions

  1. Core (but do not peel) and dice apples; you should have 5 to 6 cups. Mix with orange juice to prevent browning. Add grapes, celery and walnuts. Mix with Orange-Yogurt Dressing (see recipe). Cover and refrigerate for 1 to 3 hours.

  2. Serve in a lettuce-lined bowl or over lettuce leaves on individual salad plates. Garnish with orange slices.
