Ingredients
- 2 cups pumpkin, cooked or canned
- 1 cup milk
- 3 egg yolks
- 3/4 cup sugar
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. ginger
- 1/4 tsp. nutmeg
- 3 egg whites
- 1 unbaked pie crust
- 1 cup heavy cream
- 1/3 cup chopped nuts
Directions

Combine pumpkin and milk. Beat egg yolks until light and blend in pumpkin mixture.

Combine sugar, salt and spices; add to pumpkin mixture. Beat egg white to soft peak stage and fold in.

Line a 9-inch pie pan with pie crust. Turn pumpkin mixture into pan. Bake at 450 degrees for 10 minutes, then reduce heat to 325 degrees and cook for 45-50 minutes or until done.

Cool and top with whipped cream and nuts.
