Pumpkin Pie

Ingredients

  • 2 cups pumpkin, cooked or canned
  • 1 cup milk
  • 3 egg yolks
  • 3/4 cup sugar
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. nutmeg
  • 3 egg whites
  • 1 unbaked pie crust
  • 1 cup heavy cream
  • 1/3 cup chopped nuts

Directions

  1. Combine pumpkin and milk. Beat egg yolks until light and blend in pumpkin mixture.

  2. Combine sugar, salt and spices; add to pumpkin mixture. Beat egg white to soft peak stage and fold in.

  3. Line a 9-inch pie pan with pie crust. Turn pumpkin mixture into pan. Bake at 450 degrees for 10 minutes, then reduce heat to 325 degrees and cook for 45-50 minutes or until done.

  4. Cool and top with whipped cream and nuts.
